For week two I wanted to do one of my sisters favorite cookies, lemon cookies. This was a very simple recipe that was some what similar to the last cookie I did. I make the same substitutions as i did with the last cookie recipe. Which included applesauce instead of butter, oat flour instead of regular bleached flour, and coconut sugar instead of granulated sugar. I will say that this cookie was not as good as the last chocolate chip cookie I made. This cookie was so crumbly that if you even touched it would fall apart. Getting the cookies off the baking sheet was a huge struggle. There were crumbs all over the kitchen floors and my dogs were loving it! The average of these ratings is a 6/10 which is better than I thought my family would rate this cookie. My sister said she liked it but they had a weird after taste. My Dad and step mom said they were good but not great which I agree with. Over all I would have to work with and change this recipe a lot for me to make this again. If I were to ever make this recipe again I would not add as much flour and see if that makes a difference in the texture. The cookie it self tastes very good. That lemon flavor packs a good flavor punch. The only flaw to this cookie that the texture. Also these cookies in my opinion look ugly. I could not make them into pretty circles because of how crumbly they were, so they all turned out in different shapes and sizes. For this recipe and others click the button below

For the first week of my genius hour project I decided to start off with a classic. I started by looking up a basic chocolate chip cookie recipe. Then I started to look to see where I could make alterations in the recipe to make it healthier. I substituted regular flour for oat flour and coconut flour. Next I substituted butter for applesauce. Then my last substitution was coconut sugar and blue agave to replace granulated sugar. This recipe got and overall good rating from my family. The cookies were moist and soft. The only thing that was off about the cookies were, they were a little bit crumbly. If you were to try and pick them up they would not stay together like a normal cookie, they fall apart. Dakotas face was covered in chocolate after she was done with hers, so I would say this is a very messy cookie for a 4 year old kid. The average of all 3 of my family members ratings comes out to a 8.5. The people I had rate this recipe consist of, my mom she is 46 years old. My big sister, London she is 17 years old. Lastly my little sister, Dakota she is 4 years old. Me and my mom tried to explain the rating system to my Dakota but she didn't understand it very well, so I have a feeling for every rating she participates in, it will be a 10. Where this recipe could improve is the crumbling factor. If I were to make these cookies again I would change the coconut sugar measurement to 3/4 a cup instead of 1 cup , and change the Blue Agave measurement to 3/4 a cup instead of 1/2 cup. This should make the cookie dough stick together more because there will be more liquid in the cookie. Also instead of changing the measurements of the coconut sugar and the blue agave I could add almond milk to help the cookies stay together. Overall I would say this is a successful recipe and I would definitely recommend these cookies. This recipe makes about 25 large cookies so this would be a great recipe to bring to a party or get together. For the Recipe click this button
