Chocolate Chip Cookies 8.5/10
2 1/2 cups Oat Flour
1 cup Coconut Flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup applesauce
1 cup coconut sugar
1/2 cup Blue Agave or Honey
1 Egg
1 teaspoon vanilla
2 cups dark chocolate chunks
Directions:
- Preheat the oven to 375 degrees. In a bowl, mix flour baking soda and salt and set that aside.
- In a separate bowl, beat the applesauce, sugar and Agave with an electric mixer on a medium speed.
- In the bowl with the applesauce and sugar beat in the egg and vanilla until it is well mixed and smooth. Slowly incorporate the flour mixture and blend till the dough is stiff. Next stir in the chocolate chunks.
- Place dough onto an ungreased cookie sheet about 2 inches apart.
- Bake for 8-10 minutes
- Let the cookies cool for 2 minutes then take them off the cookie sheet and let rest till completely cool. Store in an airtight container.
Lemon Cookies 6/10
1/2 cup of apple sauce
3/4 cup coconut sugar
3 tablespoons of honey
1 large egg
1 tablespoon lemon extract
2 tablespoons lemon zest
2 cups of oat flour
1 cup coconut flour
1 teaspoon baking soda
2 table spoons lemon juice
1/4 teaspoons salt
yellow food coloring (optional)
Instructions:
- Combine apple sauce, coconut sugar, honey, egg, and lemon extract and combine together. Also preheat oven to 350 degrees F
- Add lemon zest and lemon juice and optional food coloring and mix again.
- Next add flour and salt and baking soda to the mixture and mix.
- Roll out the dough into 2 inch balls and placed on a greased baking sheet.
- Bake for about 10 minutes and allow cookies to cool for 10 minutes after they are done baking.
Banana Bread 8.75 / 10
Ingredients:
2 cups oat flour
1 teaspoon baking soda
1/4 teaspoons salt
1/2 cup apple sauce
3/4 cup trivia brown sugar
1/2 teaspoon cinnamon
2 large eggs
1/3 cup vanilla Greek yogurt
2 cups mashed bananas
1 teaspoon vanilla extract
Instructions:
- Preheat oven to 350 degrees F
- Combine flour, baking soda, and salt into a mixing bowl
- Add in apple sauce, cinnamon, vanilla extract and Greek yogurt to the bowl and mix.
- Next add in sugar and eggs
- Then mash 2 cups of bananas and fold that into the mixture
- Bake for 60 minutes and 350 and let completely cool before serving
Carrot Cake Loaf 3.5 / 10
2 cups of oat flour
1/2 cup of coconut flour
1 teaspoon baking soda
1 tablespoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
4 large eggs
3/4 cup maple syrup
1/3 cup almond butter
1/4 cup almond milk
1 teaspoon vanilla extract
1/3 cup apple sauce
3 cups of shredded carrots
Instructions:
- Preheat oven to 350 degrees F
- First add flour, baking soda and all of the spices to a large bowl and mix
- Next add in the maple syrup, vanilla extract, almond milk, almond butter, and apple sauce to the bowl.
- Lastly add 3 cups of shredded carrots to the mixture and fold them in.
- Bake for 60 minutes at 350 and let completely cool before serving
Cinnamon Rolls 7.5/10
Dough-
1 cup warm almond milk
2 1/2 teaspoons instant dry yeast
2 large eggs
1/3 cup apple sauce
4 1/2 cup oat flour
1 teaspoon salt
1/2 cup coconut sugar
5 tablespoon oat flour
Filling-
1/2 cup apple sauce
1 cup coconut sugar
3 teaspoons cinnamon
Frosting-
6 ounces of light cream cheese
1/3 cup apple sauce
1 cup coconut sugar
1/4 cup stevia
1/2 tablespoon of vanilla
375 degrees
20 minutes
- Preheat oven to 375 degrees F
- Combine warm milk, coconut sugar, and instant dry yeast and mix.
- Next in a different bowl add coconut sugar, oat flour, and salt and mix.
- Slowly combine the flour mixture with the yeast mixture.
- After fully combined add the apple sauce and eggs.
- Let the dough rest for 15 minutes
- After resting kneed the dough and slowly combine coconut flour to make the dough less sticky. Knee and add flour until the dough is no longer sticky.
- Next start on the filling by adding apple sauce coconut sugar and 3 teaspoons of cinnamon into a bowl and mixing.
- Roll out the dough and add the filling to the dough then roll the dough into a pinwheel shape.
- Cut the dough into even sliced and place on a greased baking sheet . Bake for 20 minutes.
- While that is baking make the frosting by adding 6 ounces of light cream cheese, apple sauce, coconut sugar, stevia, and vanilla extract to a bowl and beat with an electric mixer until smooth.
- Once the cinnamon rolls are done baking take them out and let them cool for 10 minutes before adding the frosting.
Oatmeal Cookies 8.5/10
Ingredients:
1 cup applesauce
1 cup coconut sugar
1 cup Truvia brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups oat flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3 cups quick cooking oats
Directions:
- Preheat oven to 375 degrees F
- In a bowl mix together the applesauce, coconut sugar, and brown sugar.
- Next add in the eggs and vanilla extract.
- Combine the flour baking soda, salt, and cinnamon and stir till combined.
- Mix in the oats.
- Place cookies onto a greased cookie sheet and flatten each cookie with a fork.
- Bake for 8-10 minutes.
Brownies 3.5/10
2 cups pumpkin puree
1 cup peanut butter
1/2 cup cocoa powder
1/4 cup coconut sugar
Directions:
- Preheat oven to 350 degrees F
- Combine pumpkin puree, cocoa powder, and coconut sugar to a bowl and mix.
- In a microwave safe bowl melt your peanut butter for 15-30 seconds.
- Add to a greased baking pan and bake for 35 minutes.
Blueberry Muffins 8/10
1 1/2 cups of almond flour
3/4 cups coconut sugar
1/4 teaspoon salt
2 teaspoons baking powder
1/3 cup apple sauce
1/2 cup almond milk
1 1/2 teaspoons vanilla extract
6 to 8 ounces of frozen blueberries
1 large egg
Directions:
- Preheat oven to 400 degrees F
- Combine coconut sugar, almond flour, salt, and baking powered to a large mixing bowl.
- In a separate bowl add the apple sauce, almond milk, and an egg and mix.
- Next combine the wet and dry ingredients and mix.
- To the mixture fold in the vanilla extract and the frozen blueberries.
- Bake for 25 minutes.
Blueberry Lemon Pound Cake 6/10
Ingredients:
2 cups all purpose gluten free flour
1/4 tsp xantham gum
1.5 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3/4 cup almond milk
3/4 cup coconut sugar
3 tbsp coconut oil
1/2 lemon, juiced and zested
1/2 cup greek yogurt
1 cup blueberries
Directions:
- Preheat oven to 350 degrees F
- Combine all the dry ingredients including flour, xantham gum, baking powder, baking soda, and salt.
- In a separate bowl combine all the wet ingredients including almond milk, coconut sugar, coconut oil, lemon juice and zest, and greek yogurt.
- Combine the wet and dry ingredients and mix till combined.
- Fold in the blueberries.
- Add to a greased tin and bake for 60 minutes.
Double Chocolate Chip Cookies 10/10
Ingredients-
2 cups oat flour
1/2 cup coconut sugar
1/3 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/3 cup apple sauce
3 tablespoons of almond milk
1 teaspoon vanilla
chocolate chips (what ever amount you personally want)
Directions-
- Preheat oven to 350 degrees F.
- Combine out flour, coconut sugar, cocoa powder baking soda, baking powder, and salt to a bowl and mix.
- Add apple sauce, almond milk, and vanilla to the same bowl and mix.
- Fold in chocolate chips
- Scoop onto a cookie sheet and bake for 10-15 minutes
Sugar Cookies 7/10
