For the last week of my 12 week project I decided to make a strawberry cobbler. I was thinking of things to make for my last week and my mom told me that she accidentally bought a large amount of strawberries and that I should do something with them. Then she suggested I make a cobbler. This was one of the top things I have made. I am glad I could end the project with a bang. It tasted like a strawberry short cake. My mom and my sister also said that it was one of their favorite things I have made. It does not look very appetizing because I had to use frozen strawberries but sometimes you just shouldn't look at the presentation and just think of the taste. My mom and my sister both gave this cobbler a 10. I have only ever gotten them both to give me 10's on one other recipe so far over these 12 weeks. If I were to make this again, however, I personally would have added some more sweetener because I have a feeling it would be so much better if it was sweeter.

For week 11 of my genius hour project I made Double Chocolate Chip Cookies. There were by far the best recipe I have made so far. I am no happy with how these turned out! They were the perfect texture soft and gooey, and they has a powerful chocolate taste. These cookies turned out good looking. They really express their chocolate traits. My mom and my sister both gave this cookie a 10! I agree with this rating. There is nothing I would change about this cookie. My sister at first tasted the batter and she said it was not sweet enough so that is when I added the honey. I am very grateful that she tasted the batter, this made me add more sweetness to it and they turned out nearly perfect. I will say that if you do not like chocolate you most likely will not like these cookies. They are very chocolaty. But if you are a chocolate lover you will love these cookies. If you are someone who doesn't like chocolate you could just not add the cocoa powder to the dough and just have regular chocolate chip cookies.
For week 10 of my genius hour project I made sugar cookies. This was a very simple recipe. With only a few ingredients the recipe turned out better than I thought it would. The texture of the cookies were kinda dense. They weren't like soft cookies. The taste of the cookies were very good, although, they didn't taste like normal sugar cookies. The cookies have a more of a strong spice taste than the sweet sugar cookie taste. I'm not sure how this taste came about because I used the basic ingredients in a sugar cookie. The look of these cookies is actually better than I anticipated. My mom and my sister both rated these cookies a 7 due to the issue with the texture. I agree with this rating. The texture of the cookies did throw them off a bit. My mom and my sister both said they cookies have a very good taste. This statement I also agree with. If I were to make these cookies again I would add about a 1/2 a cup less of flour to them. This will make the dough more sticky. When the dough is more sticky it turns out to be a softer cookie. I do not know how I could edit the recipe for it to taste more like a normal sugar cookie. I think the taste of the cookies is good on its own but I definitely would not classify it as a sugar cookie.
For week 9 of my Genius Hour Project I decided to make a blueberry lemon pound cake. The recipe was fairly simple and did not take a long time to prepare at all. The part of the process that took the longest was the baking time. The baking time was 60 minutes or and hour. Pound cakes are hands down my favorite kind of cake. My Meme makes the best pound cake. This pound cake was no where near how good her pound cake tastes but it wasn't bad at all. I will say that is the prettiest thing I have baked throughout this whole project. The flavor of the lemon was not strong enough. If I were to make this again instead of only using only half of the lemons juice I would use the whole thing. Also I would add more vanilla extract to help with the flavor of the overall thing. My mom and my sister told me that it tastes good and the texture is good but the lemon flavor is not potent enough. Overall the ratings were not bad. The reason they were lower is because my mom and my sister couldn't taste the lemon. I was very surprised with the texture of the cake. It was very similar to a normal pound cake. I would recommend trying out this recipe, but using the revisions i talked about earlier in this post.
For week 7 of my Genius Hour Project I made Blueberry Muffins. This recipe was fairly easy to make. The recipe was not complicated, I tried to keep it as simple as possible. They muffins took a lot longer to bake than I anticipated. The texture of the muffins were very gooey. I could not figure out how to make them that dense muffin consistence like normal muffins would be. I used cupcake wrapper to bake the muffins. If you tried to remove the wrapper the muffin would fall apart because they were so soft. I believe that using frozen blueberries added some extra moisture to the muffin that it definitely did not need. I would recommend using fresh blueberries instead of using frozen blueberries when using this recipe. Overlooking the texture of the muffins the taste of them was very good. They were sweet and had good flavor to them. This was my mom really liked theses muffins. My sister on the other had said they tasted really good, but she didn't like the texture of them. She said she does not like the texture of the cookies frozen blueberries. Overall this is a good recipe. If I were to try it again I would use fresh blueberries to help out the texture of the muffin.
For week 8 of my Genius Hour Project I decided to bake a spin of a classic oatmeal cookie. This was a success although, the cookies did take longer to bake than normal cookies would have. The texture of these cookies were soft and gooey. They were not like a normal cookie texture they were more soft than that. I personally prefer soft cookie over hard cookies so, if you do not like chewy and soft cookie I would not recommend using this recipe. This recipe consisted of high scores according to my sister and my mom. My sister did not say anything was wrong with the cookies but she still gave them an 8... I think she is just trying to be a harsh food critic. My mom gave them a 9 because she said they were to soft for her liking... she is one of those people who like the hard cookies. Overall I think this is a good recipe to make. If I were to make these cookies again I believe that i would not change anything about the recipe. This recipe is defiantly at the near the top of the list of the things i have baked over the course of this project.
For week 6 of my Genius Hour Project my sister requested I make brownies. The recipe I took inspiration from was a very simple recipe. I was skeptical because of the ingredients that were included. The brownie do not look very good. The pieces in the brownies are peanuts because i used crunchy peanut butter because we did not have any smooth peanut butter. The brownies had a nice texture. They were and soft chewy. They were also very thin. My sister said she did not like these very much. She said they were not sweet enough. My mom said they were not sweet enough as well. Although they said that they weren't sweet enough, they did say that the texture of the brownies were really good. If I were to make these again I would add more sweetener to them. I could add more coconut sugar or I could add maple syrup or honey to them. I think the honey would add the best flavor to them. Over all if I wouldn't recommend someone using the recipe I used to make these brownies. I would recommend using a recipe similar to mine but adding more sweetener to the batter.
This week I decided to do banana bread. This recipe was very easy and simple to make. Although it did take a long time to bake. This recipe turned out to be one of my favorite recipes I have made so far. The trick is to use very ripe bananas. This makes the bananas easier to mash and also makes the bread sweeter because the riper bananas get the sweeter they become. I personally think that this is a very ascetic loaf. This is the first recipe that has tasted most similarly to the original thing. My mom and my sister also really liked the look of this loaf of banana bread. The smell that filled the house when this was in the oven was wonderful. These are some of the highest ratings I have received on a recipe. My mom and sister said that this bread was very good. The texture of the bread was perfect it was soft and light. This loaf was gone within 24 hours. I woke up the next morning wanting some of the bread and here was none left. I highly recommend trying out this recipe. This was one of my favorite recipes so far. But if you are going to make if for a large family I would recommend making a larger batch than I put in the recipe, especially if you are wanting left overs. The loaf will not last long. At least it didn't in my household.
This week I decided to make a carrot cake loaf/ cake. This recipe was fairly easy to make, although the hardest part was shredding all the carrots. That part took so long to do. By the time I had to take a brake from shredding the carrots my hands were cramping up. I had to make my sister help me finish grading them. The loafs texture was fairly good. It was not crumbly like some of the other recipes I have made before. I just wish the color was more orange that way it would be more like the color of a carrot cake. Looking back I wish I had put in orange food coloring in the batter so that the cake would look more appealing and more like a carrot cake. This was definitely one of the worst recipes I have made. The texture was fine but the taste was not good. It was very bland and had very little taste to it. My mom and my sister both agreed this was the worst one I have made so far. I do not know how I could even fix this recipe it was just BAD! I would not recommend using the recipe. It is safe to say I will not be making this again. The only thing i would recommend if you are wanting to try this recipe despite my advice, I would by already shredded carrots. By doing this you do not have to spend he time shredding and grading carrots. Also your hands will not get cramped up.
This was definitely my most complicated and difficult recipe I have tried. This recipe took a while to make because it has so many steps in it. Although this was difficult to make, it was all worth it because i believe this one is my favorite out of all the recipes i have worked on. Although this is my favorite recipe so far it is not perfect, me and my family agreed that the frosting was not sweet enough. If I were ever to make theses cinnamon rolls again I would definable add more sweetness the the frosting. I think I could either add more coconut sugar or I could add some honey. I was very impressed with the dough. The dough turned out like a real cinnamon roll. I am glad it did not end up crumbly like all my other recipes have turned out. Overall I defiantly think this is my best recipe so far. I would recommend that you try this recipe just make sure to make the frosting sweeter. My mom said if she was only rating the dough and not the frosting she would give it a 9.5.
